Course Information
This course aims to:
- enable delegates to develop an extensive knowledge of the legal controls which are intended to prevent or reduce the risk of unsafe food getiing to the table.
- provide detailed coverage of the main food safety offences and the principal regulations governing hygiene, the use of additives and the prevention of contamination.
The use of case studies and practical workshops gives delegates the opportunity to apply their knowledge and skills.

Day one covers:
- an introduction to the general principles of UK and European food safety law
- the European Rapid Alert System and Food Standards Agency Food Alerts
- the Primary Offences:
- Section Seven Food Safety Act 1990
- Regulation 4(b) General Food Regulations 2004
- the defence of due diligence
- traceability and product recall.
Day two covers:
- hygiene regulations
- the control of additives
- residues and contaminants
- food contact materials.
