Environments such as school catering services and residential care and nursing homes and those particularly involved in the selection of ingredients, recipes and creation of nutritionally balanced menus will wish to apply the principles and advice offered in this course of study.

COURSE PROGAMME

  •  Introduction:  Nutrients and their role in maintaining health
  •  The balance of good health:  Sources of nutrients and dietary proportions needed
  •  Diet and health:  Excesses and deficiencies
  • Nutritional requirements of different groups: Identifying special dietary needs
  •  Catering for different groups: Guidelines and recommendations and menu planning
  • Food processing and fortification:  Effects and addition of nutrients  
  •   Food labelling:  An overview of legal requirements and how information is give

ASSESSMENT

After a minimum of 6 hours tuition, all course delegates will be given a short multiple-choice test consisting of 30 questions.  This will be undertaken in a quiet, undisturbed environment.  Test papers are securely marked by the Chartered Institute of Environmental Health.  The course tutor will be available if needed, for a brief post course discussion.
